Basil Pan-Seared Scallops over Pasta

Butter-seared scallops with lemon, basil, and bow-tie pasta - a flavorful and simple gourmet dish that'll impress without the effort.
Ingredients:
  • 1 (16 ounce) box farfalle (bow-tie) pasta
  • 24 scallops, rinsed and drained
  • 0.75 cup olive oil, divided
  • 0.25 cup lemon juice
  • 1.5 teaspoons dried garlic flakes, divided
  • 1 teaspoon salt, divided
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons dried basil, divided
  • 1 tablespoon whipped butter
  • 0.5 cup whipped butter
Instructions:
  • First, bring a generously salted large pot of water to a boil. Then, cook the bow tie pasta in the boiling water, stirring occasionally, until it is tender but still slightly firm, which should take around 12 minutes.
  • Place scallops in a large bowl.
  • Combine 1/4 cup oil, lemon juice, 1 teaspoon garlic, 1/2 teaspoon salt, and pepper in a bowl. Pour this flavorful mixture over scallops, ensuring they are well coated. Place the seasoned scallops in a large baking dish or plate in a single layer. Sprinkle 1 tablespoon dried basil over the top of the scallops.
  • In a large skillet over medium-high heat, melt 1 tablespoon of butter. Arrange half of the scallops in the skillet, with the basil side down, and cook until they turn a dark golden brown, about 3 to 4 minutes per side. Transfer to a plate and repeat with the remaining scallops in the same skillet.
  • In a small saucepan over medium heat, gently melt the remaining 1/2 cup butter with 1/2 cup oil, 1 tablespoon basil, 1/2 teaspoon garlic, and 1/2 teaspoon salt, stirring occasionally. This should take about 2 to 3 minutes.
  • After cooking the pasta, return it to the pot. Drizzle the hot butter sauce over the pasta, toss to coat evenly. Plate the pasta and finish by topping it with scallops.
