Salmon with basil mayo

Quick and flavorful pan-seared salmon, ideal for busy weeknights.
Ingredients:
  • 4 x 180g salmon fillet portions
  • 56.88 gm olive oil
  • 40.00 ml chopped flat-leaf parsley
  • 20.00 ml finely grated lemon rind
  • 62.50 ml shredded basil
  • 163.35 gm whole egg mayonnaise
  • 17.70 gm Dijon mustard
Instructions:
  • Mix together the oil, lemon rind, parsley, salt, and pepper. Put the salmon fillets in a spacious non-metallic bowl and pour the marinade over them, ensuring they are well coated. Cover and chill in the refrigerator for 5 minutes.
  • Combine basil, mustard, mayonnaise, and 2 tablespoons water until well mixed. Set aside. Preheat barbecue hot plate or grill. Oil well, drain salmon, and grill for 3 minutes on each side, or to preferred doneness.
  • Present the salmon alongside fragrant basil mayonnaise and zesty lemon wedges.
