Smoked salmon rolls with basil and chive dressing recipe

Impress guests with elegant smoked salmon rolls drizzled with basil and chive dressing.
Ingredients:
  • 125.00 gm spreadable cream cheese
  • 2 tsp finely grated lemon rind
  • 40.00 ml finely chopped cornichons
  • 2 tsp finely chopped capers
  • 2 tsp finely chopped fresh chives
  • 200g packet smoked salmon
  • 1 Lebanese cucumber, peeled into ribbons
  • 18.20 gm extra virgin olive oil
  • 42.00 gm lemon juice
  • 2.50 gm caster sugar
  • 20.00 ml finely chopped fresh chives
  • 20.00 ml finely chopped fresh basil leaves
Instructions:
  • Prepare the Basil and Chive Dressing by mixing all the ingredients in a serving bowl and season to taste.
  • Combine cream cheese, lemon rind, cornichons, capers, chives, and a sprinkle of pepper in a bowl. Mix well.
  • Lay down a piece of salmon and spread 2 teaspoons of cream cheese mixture, leaving a 1cm border on one end. Place 2 pieces of cucumber on top. Roll up starting from the end without the border to seal the filling. Cut in half and arrange on a plate. Repeat with the rest of the ingredients. Serve with dressing.
