Delicious homemade smoked salmon sushi rolls with cream cheese.
Ingredients:
  • 0.66666668653488 cup water
  • 0.33333334326744 cup medium-grain white rice, uncooked
  • 6 tablespoons rice vinegar
  • 4 sheets nori (dry seaweed)
  • 4 ounces smoked salmon, cut into strips
  • 2 ounces cold cream cheese, cut into thin strips
  • 4 scallions, sliced into thin strips
Instructions:
  • In a saucepan, bring water and rice to a boil, then simmer covered until rice is tender and water is absorbed, for 20-25 minutes. Let cool for about 10 minutes before tossing with vinegar.
  • Lay out a sheet of nori on a rolling mat, spread 1/4 of the rice evenly, and place 1/4 of the salmon, cream cheese, and scallions in the middle. Roll up tightly, wrap in plastic wrap, and refrigerate for at least 1 hour. Repeat with the rest of the ingredients.
  • Take the sushi rolls out of the refrigerator, remove the plastic wrap, and slice each roll into 6 pieces. Arrange the slices on a platter.
