Ingredients:
  • 540g rice
  • 935ml water
  • 125ml rice vinegar
  • 40.00 gm caster sugar
  • 6 nori sheets
  • 200g fresh salmon, cut into 1cm-thick batons
  • 1 avocado, halved, stoned, peeled, thinly sliced
  • Light soy sauce, to serve
  • Wasabi paste, to serve
  • Pickled ginger, to serve
Instructions:
  • 1. Rinse the rice in a sieve under cold running water until the water runs clear to remove excess starch. 2. In a large covered saucepan, bring the rinsed rice and water to a boil over high heat. 3. Once boiling, reduce heat to low, cover, and cook for 12 minutes until all water is absorbed. 4. Remove from heat and let it sit covered for 10 minutes to cool slightly before serving.
  • Mix the vinegar, sugar, and salt in a small bowl. Place the rice in a large glass bowl. Use a wooden paddle to break up any lumps in the rice while slowly adding the vinegar mixture, gently folding to mix. Keep folding and fanning the rice for 15 minutes until it cools down.
  • Lay a sushi mat flat with slats running horizontally. Put a nori sheet on the mat, glossy side down. Spread one-sixth of the rice over the nori using damp hands, leaving a 3cm border along the top edge.
  • Position the salmon and avocado along the middle of the rice. Secure the filling in place as you roll the mat to wrap the rice and filling. Repeat the process with the remaining nori, rice, salmon, and avocado.
  • Slice sushi into 1.5cm-thick slices using a sharp knife. Serve on dishes with soy sauce, wasabi, and pickled ginger, if preferred.
