No rolling mat required for this inventive sandwich-style twist!
Ingredients:
  • 200.00 gm sushi rice
  • 32.50 gm mirin seasoning
  • 3 hard-boiled eggs, finely chopped
  • 1 green onion, thinly sliced
  • 29.70 gm whole-egg mayonnaise
  • 2 nori sheets
Instructions:
  • To make sushi rice, thoroughly rinse the rice under cold water until the water runs clear. Place the rice in a sieve over a bowl and let it drain for 10 minutes.
  • In a small saucepan over medium heat, combine rice with 1 cup of cold water. Bring it to a boil, then lower the heat and simmer covered for 12 minutes until the water is absorbed. Remove from heat and let it stand covered for 10 minutes before serving.
  • Spread the rice in a large ceramic dish. Use a spatula to gently break up any lumps. Slowly sprinkle in the seasoning while gently lifting and turning the rice until it cools.
  • Combine egg, onion, and mayonnaise in a medium bowl, stirring until mixed.
  • Lay nori sheets shiny-side down on work surface. Evenly spread half of the rice mixture over each nori using damp fingers. Top one nori sheet with the egg mixture.
  • Take the second rice-covered nori sheet and lay it over the egg mixture, rice-side down. Press gently to make sure it sticks. Cut into 4 squares, then cut each square into 4 triangles to create 16 sandwiches. Serve and enjoy!
