Baked salmon with basil and lemon thyme crust, a gourmet delight in a Panasonic CIO.
Ingredients:
  • 1.3333333730698 pounds salmon fillet
  • 1 pound fresh asparagus, trimmed
  • 2 cloves garlic
  • 0.33333334326744 cup grated Parmesan cheese
  • 0.33333334326744 cup chopped fresh basil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh lemon thyme
  • 1 lemon, zested
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup fresh bread crumbs
Instructions:
  • Massage the salmon gently with 1/2 teaspoon of luscious olive oil, sprinkle with a touch of salt and pepper to awaken the flavors, then place it proudly at the center of the grill pan.
  • In a bowl, toss asparagus with 1 1/2 teaspoons of olive oil, salt, and pepper. Arrange it around the salmon.
  • In a food processor or blender, crush garlic cloves. Add Parmesan cheese, basil, lemon juice, lemon thyme, lemon zest, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and pulse to blend. Pour in the remaining 3 tablespoons of oil and bread crumbs; pulse until thoroughly combined.
  • Coat salmon generously with flavorful herb mixture to create a delicious crust.
  • Preheat Panasonic Countertop Induction Oven to "Auto Cook" and choose the Fish with Vegetables setting. Put the grill pan in the oven and bake for about 18 minutes until the salmon is flaky and the asparagus is tender.
