Baked salmon recipe

"Herb baked salmon with crispy potatoes and a light green salad - a quick and elegant dish with just 15 minutes of preparation."
Ingredients:
  • 750g chat potatoes
  • olive oil cooking spray
  • 8 slices white bread, crusts removed
  • 82.50 ml basil leaves
  • 82.50 ml grated parmesan cheese
  • 27.30 gm olive oil
  • 4 skinless salmon fillets, bones removed
  • dressed salad leaves, to serve
Instructions:
  • Preheat oven to 200°C and lightly grease both an oven tray and a 6cm deep, 20cm x 28cm (base) baking dish with oil for the recipe.
  • In a saucepan, cover potatoes with cold water and bring to a boil. Cook for 10 minutes until tender. Drain and place on a tray. Gently press potatoes with a potato masher and spray with oil.
  • Place bread in a food processor and pulse until roughly chopped. Add basil and parmesan, then pulse until mixture becomes fine breadcrumbs. While the processor is on, drizzle in oil until well combined.
  • Lay the salmon, skin side down, in the dish and generously sprinkle the crumb mixture on top.
  • Place potatoes and fish in the oven, ensuring the potatoes are on the top shelf and the fish is on the shelf below. Bake for 25 to 30 minutes or until the potatoes are golden and the fish is cooked through. Serve with a side salad.
