Easiest-ever baked salmon recipe

"Delicious and nutritious family dinner idea: Boneless skinless salmon fillet from your fishmonger."
Ingredients:
  • 1 whole side (about 1.6kg) salmon fillet, skin off, boneless
  • 1 bunch radishes, finely sliced
  • 1 small fennel bulb, finely sliced
  • 62.50 ml fresh continental parsley leaves
  • 62.50 ml fresh dill
  • 1 lemon, rind finely grated, juiced, plus extra wedges, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan forced. Line a large baking tray with baking paper. Place the salmon on the tray, drizzle 1 tablespoon of oil over it, and spread evenly with your hands or a brush. Season the salmon and bake for 20 minutes. Allow it to cool slightly before transferring to a serving platter.
  • Combine radish, fennel, parsley, and dill in a bowl. Drizzle with lemon juice and remaining 1 tablespoon of oil. Toss to combine.
  • Place the salad on top of the salmon and generously sprinkle with lemon zest. Season to taste and garnish with additional lemon wedges before serving.
