Cozy basil pesto pasta, quick and comforting for chilly days!
Ingredients:
  • 375g linguine
  • 250.00 ml fresh basil leaves
  • 40.00 ml pine nuts, toasted
  • 40.00 ml grated parmesan cheese
  • 56.88 gm extra virgin olive oil
  • Shaved parmesan cheese, to serve
  • Salt and pepper, to season
Instructions:
  • Boil pasta in a saucepan of salted water until tender according to package instructions. Drain and return to the pan.
  • Blend fresh basil, pine nuts, garlic, and parmesan in a food processor until nearly smooth, scraping down the sides as needed.
  • While the food processor is running, drizzle in the oil steadily until well mixed. Finish by seasoning with salt and pepper to taste.
  • Drizzle the pasta with vibrant pesto, toss to coat generously, then sprinkle with grated parmesan before serving.
