Make basil pesto using a mortar and pestle or food processor for a quick option.
Ingredients:
  • 250.00 ml basil leaves, firmly packed
  • 62.50 ml pine nuts
  • 1 garlic clove, chopped
  • 56.88 gm extra virgin olive oil
  • 62.50 ml parmesan, grated
  • Salt and pepper, to taste
Instructions:
  • In a mortar, combine basil leaves, pine nuts, and garlic. Crush and mix with a pestle until a coarse paste forms.
  • Drizzle in luxurious extra virgin olive oil, while gently mixing to blend. Toss in Parmesan, and season generously with salt and pepper. Stir until fully incorporated.
  • Using a food processor, finely chop all ingredients except oil. Gradually add the oil and continue processing until well combined.
