Basil-Lemon Pork Chops with Melon

Easy grilled pork chops with lemonade marinade and grilled melon wedges for a unique twist.
Ingredients:
  • 1 can (12 oz) frozen lemonade concentrate, thawed
  • 1/2 cup fresh or 2 1/2 tablespoons dried basil leaves
  • 1/4 cup olive or vegetable oil
  • 4 pork loin or rib chops, 1 inch thick (2 lb)
  • 1/4 honeydew melon, peeled and cut into 4 wedges
  • 1/4 cantaloupe, peeled and cut into 4 wedges
  • Salt and pepper to taste
Instructions:
  • Combine lemonade concentrate, basil, and oil in a small bowl until thoroughly mixed; set aside 3/4 cup for basting pork and melon while grilling. Pour the rest over the pork in a shallow dish or sealable bag, making sure the meat is evenly coated with the marinade. Cover and refrigerate for 1-2 hours, flipping the pork halfway through.
  • Prepare the grill by brushing the rack with vegetable oil and heating coals or gas grill for direct heat. Drain the pork and discard the marinade. Place the pork on the grill rack, cover, and grill over medium heat for 12 to 16 minutes, turning once and brushing with reserved marinade, until the pork is no longer pink in the center. During the last 3 to 4 minutes of grilling, add the melon and cantaloupe wedges, turning and brushing 2 to 3 times with reserved marinade until hot.
  • Season pork generously with salt and pepper before serving alongside melon.
