Creamy avocado pasta with bacon and basil lemon dressing, a unique twist on classic carbonara.
Ingredients:
  • 1 (8 ounce) package bow-tie pasta
  • 6 slices bacon
  • 0.66666668653488 cup chopped basil
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 0.125 teaspoon salt
  • 2 avocados, chopped
  • 0.5 cup grated Romano cheese
Instructions:
  • Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 12 minutes. Drain well.
  • In a large skillet, crisp up the bacon over medium-high heat, flipping occasionally, until golden brown all over. Transfer to paper towels to drain and then crumble it into small pieces.
  • Combine the fresh basil, tangy lemon juice, flavorful olive oil, minced garlic, zesty pepper, and a sprinkle of salt in a small bowl.
  • In a large bowl, mix together bacon pieces and avocado. Stir in the basil mixture, then add the pasta and toss to combine. Finish by sprinkling Romano cheese on top.
