German-inspired pork roast with sweet paprika, caraway seeds, and grainy mustard for a flavorful twist.
Ingredients:
  • 2 carrots
  • 2.25 pounds boneless pork loin roast
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon ground black pepper, or more to taste
  • 1 teaspoon sweet paprika
  • 0.5 teaspoon caraway seeds
  • 2 teaspoons grainy mustard
  • 1 tablespoon vegetable oil
  • 1 large onion, quartered
  • 0.125 celeriac (celery root), chopped
  • 1 spring onion, chopped
  • 2 cups water, or as needed - divided
  • 2 tablespoons butter, or to taste
  • 2 tablespoons cornstarch
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Season the pork loin with a flavorful blend of salt, black pepper, paprika, and caraway seeds, then generously spread mustard over the pork.
  • In a large skillet over medium-high heat, sizzle pork in vegetable oil until beautifully browned, for around 15 minutes. Then, sauté onion, carrots, celeriac, and spring onion in the same skillet until tender, stirring for about 10 minutes. Layer this aromatic vegetable medley around the pork in a roasting pan.
  • Deglaze the skillet by adding 1 cup of hot water. Use a spatula to scrape up all the flavorful browned bits from the bottom. Pour this delicious liquid over the pork.
  • Roast in a well-heated oven for 2 1/2 to 3 hours, brushing frequently, until pork is slightly pink at the center. Ensure the internal temperature reaches at least 145 degrees F (63 degrees C). If vegetables start to dry out, incorporate 1 cup of hot water, as necessary.
  • Place the pork roast on a large platter to stay warm. Strain the liquid through a sieve into a saucepan, making sure to keep the vegetables aside for later use.
  • Bring the liquid to a lively boil, then swirl in butter and cornstarch; let it gently simmer until the sauce thickens, approximately 5 minutes. Slice the pork and plate with the luscious sauce and colorful vegetables.
