BBQ beef fillet with sage and prosciutto recipe

Succulent BBQ beef fillet wrapped in savory prosciutto, served with creamy horseradish mayo - a festive Aussie favorite with maximum flavor, minimal effort.
Ingredients:
  • 2 x 500g No Added Hormones Beef Eye Fillet
  • 58.50 gm Dijon mustard
  • 12 sage leaves
  • 12 prosciutto slices
  • 120g sour cream
  • 150g mayonnaise
  • 20.00 ml white wine vinegar
  • 2 tsp horseradish cream
  • 40.00 ml finely chopped dill
Instructions:
  • 1. Preheat a covered barbecue to medium heat. 2. Spread 2 tablespoons of mustard on the beef and top with sage. 3. Arrange 3 prosciutto slices in a row on a clean work surface, slightly overlapping along the long sides. Repeat with another 3 slices to create a large rectangle. 4. Roll up a piece of beef with prosciutto starting from one short side of the rectangle. Place on a baking tray. Repeat with the remaining beef and prosciutto.
  • Grill beef for 2 minutes on each side until beautifully golden and lightly charred. Place on a baking tray and roast in a covered barbecue over indirect heat for 15 minutes for a perfect medium-rare, or until your desired doneness. Cover with foil, let it rest for 15 minutes, then slice thickly.
  • Whisk together sour cream, mayonnaise, vinegar, horseradish, dill, and the remaining mustard in a bowl. Season to taste.
  • Place the salad and beef elegantly on a platter, season to perfection, and accompany with the delicious dressing.
