Family dinner winner: Flavorful barley salad with fresh veggies, paired perfectly with juicy grilled lamb cutlets.
Ingredients:
  • 200g pearl barley
  • 12 Lamb Cutlets, French trimmed, or 4 Lamb Forequarter Chops
  • 5.00 gm smoked paprika
  • 2 tsp dried oregano
  • 60ml olive oil
  • 300g mixed medley tomatoes, coarsely chopped
  • 1 Lebanese cucumber, coarsely chopped
  • 1 red onion, finely chopped
  • 2 spring onions, thinly sliced
  • 125.00 ml coarsely chopped mint
  • 125.00 ml coarsely chopped flat-leaf parsley
  • 1 lemon, zested, juiced
Instructions:
  • Simmer barley in a generous amount of boiling water for 20 minutes or until tender. Rinse under cold running water and drain thoroughly.
  • In a large bowl, mix together the lamb, paprika, oregano, and 1 tablespoon of oil. Add seasoning and toss until well combined.
  • Preheat a barbecue grill or chargrill over medium-high heat. Grill lamb for 2-3 minutes on each side for a perfect medium doneness. Place the lamb on a plate, cover it with foil, and let it rest for 5 minutes before serving.
  • Combine barley, tomato, cucumber, onion, spring onion, mint, and parsley in a large bowl. Drizzle with lemon juice and remaining oil, then toss to mix well.
  • Spread the barley mixture on a serving platter, place the lamb on top, and finish off with a sprinkle of lemon zest before serving.
