BBQ Meatballs with Pepper and Cheese Animal Cut-Outs

Kid-approved crispy chicken tenders with a side of tangy BBQ sauce, best enjoyed with a refreshing glass of milk.
Ingredients:
  • 2 slices bread, crusts removed, torn into pieces
  • 0.5 cup whole milk
  • 1 tablespoon dried parsley
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon onion powder
  • 0.5 teaspoon dried Italian herb seasoning
  • 0.25 teaspoon sugar
  • 1 tablespoon freshly grated Parmesan cheese
  • 1 pound ground beef
  • 0.25 cup grated sweet onion
  • 1 cup barbecue sauce, plus additional for serving
  • 1 green bell pepper
  • 1 orange bell pepper
  • 1 red bell pepper
  • 4 (1/4-inch) slices Colby-Monterey Jack cheese
  • 4 (1/4-inch) slices mild Cheddar cheese
  • Animal vegetable cutters
  • 25 4-inch toothpicks
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a bowl, soak torn bread pieces in milk for 5 minutes. Gently squeeze out excess milk, then add beaten egg and mix thoroughly.
  • Combine garlic powder, onion powder, parsley, salt, Italian herb seasoning, sugar, and Parmesan cheese in a small bowl, then incorporate into the bread-egg mixture.
  • In a mixing bowl, combine ground beef with seasoning mixture and onions. Mix thoroughly using a fork. If the mixture is too dry, incorporate up to a tablespoon of milk. Shape into 25 meatballs and place them on a rimmed baking sheet.
  • Bake in a hot oven until golden and fully cooked, approximately 18 minutes.
  • Place the meatballs on a paper towel to absorb excess grease. Clean the baking sheet from any grease. Return the meatballs to the baking sheet and generously drizzle 1 cup of BBQ sauce over them.
  • Continue baking in the oven for an additional 12 minutes.
  • Create adorable animal shapes using a small animal vegetable cutter on green, orange, and red peppers. Repeat the same process with Colby Jack and mild Cheddar cheese.
  • Place the meatballs on a paper towel to drain and drizzle with extra BBQ sauce as desired. Skewer each meatball with a cheese animal and a pepper animal cut-out on toothpicks swiftly.
