Bean & corn tortilla sandwiches

Spicy bean and corn quesadillas - a flavorful Mexican delight!
Ingredients:
  • 412.50 gm pasta sauce
  • 400g can kidney beans, drained and rinsed
  • 420g can corn kernels, drained
  • 35g sachet burrito seasoning mix
  • 18.40 gm vegetable oil
  • 250.00 ml grated tasty cheese
  • 125.00 ml coriander leaves, chopped
  • 8 tortillas
  • 1 avocado, diced
Instructions:
  • Warm the pasta sauce in a saucepan over medium heat. Throw in the beans and corn. Mix in the burrito seasoning and let everything simmer for 2 minutes.
  • In a large frying pan over medium heat, heat oil. Add 1 tortilla and cook for 1 minute. Sprinkle 1/4 of the cheese and bean and corn mixture on top. Place another tortilla on top, flip, and cook for another 1 minute until crispy.
  • Continue assembling the remaining tortillas with the filling. Cut the stack of tortillas into quarters and garnish each serving with avocado and fresh coriander.
