Delicious and comforting turkey, bacon, and bean soup - a satisfying family favorite!
Ingredients:
  • 2 tablespoons vegetable oil
  • 0.5 pound bacon, chopped
  • 0.5 pound sliced deli turkey meat, torn into pieces
  • 1 onion, sliced
  • 1 (14.25 ounce) can tomato puree
  • 1 tablespoon brown sugar
  • 1 teaspoon prepared mustard
  • 1 pinch ground black pepper
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can cannellini beans, drained and rinsed
Instructions:
  • In a large pot over medium heat, sizzle the oil until it shimmers. Add in the bacon, turkey, and onion, and sauté until the bacon is crispy and the onion is soft.
  • Combine the tomato puree, brown sugar, and mustard in the pot and season with salt and pepper. Bring to a boil, then simmer on low for 30 minutes, stirring occasionally.
  • Combine the kidney beans and cannellini beans in the soup, adding water as necessary to cover the ingredients. Cook and stir occasionally until beans are warmed through.
