Satisfying ham and bean soup with cabbage to cozy up with.
Ingredients:
  • 250.00 ml dried cannellini beans, rinsed
  • 1kg ham hock, rind removed
  • 1 brown onion, halved, cut into thin wedges
  • 4 fresh thyme sprigs
  • 1/4 small green cabbage, shredded
  • Fresh thyme sprigs, to serve
Instructions:
  • Place the beans in a glass or ceramic bowl, cover with cold water, and let them soak overnight. Drain before using.
  • In a large saucepan, combine beans, ham hock, onion, thyme, and 2 litres of cold water. Bring to a boil, then lower the heat to medium. Simmer partially covered for 1 hour and 30 minutes until the beans and ham are tender.
  • Take the pan off the heat. Remove the ham hock from the pan, discard the bone and fat, then shred the ham. Return the shredded ham to the pan along with the shredded cabbage. Place the pan over low heat and cook for 5 minutes, or until heated through and the cabbage has wilted. Serve.
