Impress with this crowd-pleasing dish that is sure to charm and satisfy.
Ingredients:
  • 30g butter
  • 1 medium leek, trimmed, halved, washed, thinly sliced
  • 2 medium carrots, peeled, finely chopped
  • 1kg ham hock
  • 400g sebago potatoes, peeled, chopped
  • 250.00 ml dried macaroni pasta
  • 2 x 400g cans cannellini beans, drained, rinsed
Instructions:
  • In a large saucepan over medium-high heat, melt butter. Add leek and carrot, stirring occasionally, for 5 minutes until onion has softened. Stir in garlic and cook for 1 more minute until fragrant.
  • Place ham and 8 cups of cold water into a pot, cover, and bring to a boil. Reduce heat to low and simmer covered for 1 hour until the ham is tender. Add potato and simmer for 15 minutes until just tender. Remove ham and let it cool for 20 minutes. Shred the ham after removing and discarding the bones and rind.
  • Cook pasta in a saucepan of boiling salted water according to package instructions until tender. Drain.
  • Combine the shredded ham, beans, and pasta with the soup mixture and simmer for 5 minutes until everything is heated through. Serve hot.
