Hearty white bean and ham soup: a tasty, budget-friendly crowd-pleaser.
Ingredients:
  • 2 pounds dry great Northern beans
  • 6 tablespoons olive oil
  • 3 medium onions, finely chopped
  • 3 carrots, finely chopped
  • 1 pound cooked ham, finely diced
  • 6 medium tomatoes, peeled and finely chopped
  • 3 large cloves garlic, finely chopped
  • 0.75 cup chopped fresh parsley
  • 4 teaspoons chopped fresh thyme
  • 1 teaspoon celery salt
  • salt and freshly ground black pepper to taste
Instructions:
  • Rinse and sort beans as directed on package. Transfer to a 3 1/2-quart or larger slow cooker and fill with water. Let soak for 8 hours to overnight without turning on the cooker.
  • Discard any excess water and add fresh water to the cooker. Set the cooker to Low heat and simmer until beans are tender, approximately 8 hours.
  • In a large soup pot, gently heat oil over medium-low heat. Add onions and carrots, cooking until onions are soft and carrots begin to soften, approximately 5 minutes. Stir in ham, tomatoes, and garlic, then let simmer for another 5 minutes.
  • Blend around 2/3 of the cooked beans in batches in a blender or food processor with the bean broth, adding water if necessary. Combine puree and whole beans in the pot; adjust thickness with water. Mix in parsley, thyme, celery salt, salt, and pepper. Simmer gently, stirring occasionally, until soup is hot and vegetables are tender, approximately 20 minutes.
