Whip up a simple and delicious white bean and green chile soup for a cozy family dinner.
Ingredients:
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 3.5 cups milk, or more to taste
  • 1 (15 ounce) can white beans, drained
  • 1 (4.5 ounce) can chopped green chile peppers
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon ground cumin
  • 1 pinch ground cayenne
  • salt and ground black pepper to taste
Instructions:
  • In a saucepan over medium-high heat, melt the butter until bubbly and frothy. Whisk in the flour until a smooth, golden paste forms, this should take about 45 seconds. Slowly pour in the milk while whisking continuously. Reduce the heat to medium-low and cook and stir until thickened, approximately 5 minutes.
  • Incorporate white beans into the saucepan along with green chile peppers, onion powder, cumin, cayenne, salt, and pepper. Heat through for approximately 5 minutes.
