White bean & feta puree

Creamy white bean and feta puree is a perfect pairing for lamb cutlets or roast meats.
Ingredients:
  • 2 x 400g cans cannellini beans, rinsed, drained
  • 9.20 gm olive oil
  • 1 brown onion, halved, finely chopped
  • 21.00 gm fresh lemon juice
  • 35g low-fat feta, crumbled
  • Salt & freshly ground black pepper
Instructions:
  • In a non-stick frying pan over medium heat, sauté the onion and garlic in oil until the onion softens, about 3-4 minutes. Stir in cannellini beans, feta, and lemon juice, and cook until heated through, about 1-2 minutes.
  • Transfer the bean mixture to a food processor and blend until nearly smooth. Pour back into the pan over low heat. Warm for 1 minute or until heated. Season with salt and pepper to taste.
