Lemon pepper chicken with kale and white bean slaw recipe

Create a protein-packed veggie salad for a satisfying dinner tonight.
Ingredients:
  • 600g chicken breast fillets
  • 20.00 ml lemon pepper seasoning
  • 350g pkt Kitchen Kaleslaw Salad Kit
  • 400g can cannellini beans, rinsed, drained
  • 100g fetta, crumbled
Instructions:
  • Preheat a barbecue grill or chargrill to medium heat, then lightly coat with olive oil spray. Season chicken with lemon pepper, then grill each side for 5 minutes or until fully cooked. Tent with foil before serving.
  • In a large bowl, mix the salad kit according to packet instructions, setting aside the dressing. Gently combine the beans and feta.
  • Slice the chicken generously. Serve the slaw mixture on plates, drizzle with the reserved dressing, and top with the sliced chicken before serving.
