Slow-Cooker Lemon-Pepper Chicken with Green Olives and Potatoes

Tender chicken with creamy potatoes and olives in a flavorful lemon herb sauce. Browning chicken and onions on stove for maximum flavor. Deglaze skillet for easy cleaning and added richness. Slow cook for impressive results.
Ingredients:
  • 1 1/2 lb baby Yukon Gold potatoes, halved
  • 2 1/2 teaspoons lemon pepper seasoning
  • 2 teaspoons finely chopped fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 bone-in skin-on chicken thighs (about 2 1/2 lb)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, finely chopped
  • 1/4 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 teaspoon grated lemon peel
  • 3/4 cup Castelvetrano green olives, unpitted
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley
  • Lemon wedges
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Add potatoes, lemon pepper seasoning, thyme, salt, and pepper. Mix well to ensure even coating.
  • Sprinkle chicken with the remaining lemon pepper seasoning, salt, and pepper. Heat oil in a large skillet over medium-high heat. Place chicken thighs skin-side down in the skillet and cook for 6 to 7 minutes or until browned, flipping once.
  • Place the chicken into the slow cooker.
  • In a skillet, leave only 1 tablespoon of drippings. Sauté the onion for 4 minutes over medium heat, then add garlic and cook for another 1 to 2 minutes until onions are lightly browned. Transfer the onion mixture to a slow cooker.
  • In a skillet, combine broth and lemon peel. Bring to a boil over medium heat, making sure to scrape up all the flavorful brown bits from the bottom. Transfer the mixture to a slow cooker.
  • Place green olives in the slow cooker, cover, and cook on Low heat for 5 to 6 hours until the chicken reaches an internal temperature of at least 165°F and the potatoes are tender.
  • Sprinkle the remaining 1 teaspoon of thyme and parsley over the dish. Serve with side of lemon wedges.
