Tender whole chicken infused with zesty lemon pepper, garlic, and fragrant thyme, slow-cooked to mouthwatering perfection.
Ingredients:
  • 1 (2 to 3 pound) whole chicken, giblets removed
  • 0.25 cup butter, softened
  • 1 teaspoon lemon pepper
  • 1 (1-inch thick) slice of lemon
  • 2 cloves garlic, lightly crushed, or more to taste
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons seasoned salt
  • 1 teaspoon dried thyme
  • 1 pinch cracked black pepper to taste
Instructions:
  • Wash chicken thoroughly, then dry it with paper towels. Gently separate the skin from the breast and thighs using your fingers.
  • Combine butter and lemon pepper in a small bowl. Gently slide seasoned butter under the loosened skin using a teaspoon. Push the butter through the skin. Stuff the chicken cavity with lemon slice and garlic cloves.
  • Prepare the slow cooker. Place the chicken inside and massage with flavorful olive oil. Season generously with seasoned salt, thyme, and cracked black pepper for added depth of flavor.
  • Cook the chicken on High for 3 hours; then switch to Low heat and continue cooking until the chicken is very tender and reaches an internal temperature of at least 160 degrees F (70 degrees C) when measured with an instant-read meat thermometer in the thickest part of a thigh, avoiding the bone. This should take an additional 2 to 3 hours. For a longer, slower cooking method, you can also cook the bird on the Low setting for 6 to 8 hours, if preferred.
