Family favorite lemon-pepper chicken drumsticks.
Ingredients:
  • 800g Desiree potatoes, cut into 1cm-thick slices
  • 1.15kg Chicken Drumsticks
  • 2 garlic cloves
  • 1 lemon, zested, juiced
  • 1/2 tsp crushed black peppercorns
  • Olive oil spray
  • 20.00 ml rosemary sprigs
  • Steamed green beans, to serve
Instructions:
  • Boil potatoes in a saucepan of water until tender, about 8-10 minutes. Drain carefully.
  • Crush 1 garlic clove and place it in a jug along with lemon zest, lemon juice, peppercorns, and 2 tbsp of oil. Season with salt. Put chicken in a large glass or ceramic dish, pour the lemon mixture over it, and toss to coat. Let it marinate for 15 mins before cooking.
  • Preheat a barbecue or chargrill to medium-high heat. Grill chicken, turning occasionally, for 20 minutes or until fully cooked. Transfer to a plate, cover with foil to keep warm.
  • Coat potato slices with oil and grill in batches for 3-5 mins per side until beautifully golden and fully cooked. Place in a bowl. In a small saucepan, heat the remaining oil, garlic, and rosemary over medium heat for 2 mins. Drizzle over the potatoes and gently toss to coat. Season to taste and serve alongside chicken and beans.
