Blue Eye with garlic spinach and white bean mash

Enjoy a delicious plate of perfectly cooked fish with flavorful garlic spinach and creamy white bean mash on the side.
Ingredients:
  • 4 blue eye fillet portions, middle cut
  • oil spray
  • salt and cracked black pepper
  • 2 x 400g cans white beans (cannellini), rinsed and drained
  • 125ml chicken stock
  • 1/2 tsp thyme leaves
  • 2 tsp finely grated lemon rind
  • 50g unsalted butter, softened, roughly chopped
  • 2 small cloves garlic, crushed
  • 150g baby spinach leaves
Instructions:
  • 1. Preheat oven to 200°C. 2. Line a large baking dish with non-stick baking paper. 3. Place the fish in the dish. 4. Lightly spray the fish with oil spray and sprinkle with salt and pepper. 5. Bake for 15 minutes or until cooked through.
  • In a medium saucepan, simmer white beans with stock until reduced for 8 minutes. Mash with a fork, then blend in thyme, lemon rind, salt, pepper, and half the butter. Cover with foil and set aside.
  • Heat the remaining butter in a deep non-stick frying pan over medium heat. Cook garlic for 2-3 minutes, then add spinach and cook for another 3-4 minutes until wilted. Season with salt and cracked black pepper before serving.
  • Plate the savory garlic-infused spinach, then crown it with flavorful baked fish and a dollop of creamy white bean mash.
