White Bean and Spinach Soup

Overnight soaked white beans with fresh spinach, garlic, and parsley in a hearty, healthy soup for a quick and satisfying weeknight dinner.
Ingredients:
  • 1 cup dried white beans
  • water to cover
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, cut into matchsticks
  • 0.5 pound fresh spinach
  • 2 teaspoons minced garlic
  • 1 bay leaf
  • 3 tablespoons chopped fresh parsley
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • In a large container, add white beans and cover with water. Soak for 8 hours to overnight.
  • Separate beans from water, keeping 2 cups of soaking liquid.
  • In a large pot over medium heat, sauté onions and carrots in oil until tender for about 6 minutes. Add spinach and cook until wilted for about 2 minutes. Stir in beans, reserved soaking water, broth, garlic, and bay leaf. Cover and simmer for around 1 hour until beans are tender.
  • Remove bay leaf and discard. Blend half of the soup in a blender until smooth, using a potholder to secure the lid. Return the pureed soup to the pot and season with parsley, salt, and black pepper.
