Creamy spinach and white bean soup with zesty lemon - a refreshing detox dish.
Ingredients:
  • 3 cups baby spinach
  • 0.5 cup chopped carrot
  • 3 tablespoons olive oil
  • 1 shallot, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken stock
  • 1 (15 ounce) can white beans, drained
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons lemon juice
Instructions:
  • Pulse baby spinach and carrot in a food processor until finely chopped.
  • In a large pot over medium heat, sauté shallot and garlic in oil until fragrant, about 2-3 minutes. Add spinach, carrots, chicken stock, white beans, oregano, thyme, salt, and pepper. Bring to a boil, then simmer for 20 minutes to meld flavors.
  • Take the pot off the heat and mix in the fresh lemon juice. Use an immersion blender to puree the mixture until it's silky smooth.
