Savory Portuguese sausage soup with potatoes, cabbage, kidney beans, ham, and pasta.
Ingredients:
  • 2 pounds spicy Portuguese sausage, sliced
  • 1 pound ham hocks
  • 1 onion, sliced
  • 2 quarts water
  • 2 carrots, diced
  • 3 potatoes, diced
  • 1 small head cabbage, chopped
  • 1 (8 ounce) can tomato sauce
  • 2 (15 ounce) cans kidney beans
  • 1 (16 ounce) package macaroni
Instructions:
  • Combine sausage, ham hocks, onion, and water in a large pot over low heat. Cover and simmer for 1 hour to develop rich flavors.
  • Take out the ham hock from the soup, shred the meat into small pieces, and add it back to the pot along with carrots, potatoes, cabbage, and tomato sauce. Cover and let it cook for an additional 60 to 90 minutes.
  • Combine the beans and pasta in the pot. Add water as necessary. Cook until the pasta is tender and everything is heated through, approximately 10 minutes.
