Portuguese Bean Soup I

Spicy chorizo and vegetable soup with a kick of cayenne pepper.
Ingredients:
  • 0.5 pound chorizo sausage, chopped
  • 0.25 cup olive oil
  • 2 carrots, chopped
  • 1 cup chopped onion
  • 5 stalks celery, chopped
  • 5 tomatoes, chopped
  • 3 small potatoes, peeled and chopped
  • 3 quarts chicken broth
  • 1.5 tablespoons cayenne pepper
  • 1 (15 ounce) can kidney beans, drained
  • 0.5 cup tomato paste
Instructions:
  • In a large, deep skillet, brown the sausage over medium-high heat until cooked through. Drain, crumble, and set aside.
  • Heat oil in a stockpot over medium-high heat, saute carrots, onion, and celery. Stir in tomatoes, potatoes, kidney beans, and chicken broth. Bring to a boil, add cayenne pepper and tomato paste, then simmer for 20 minutes. Add sausage, season with salt and pepper, and serve hot.
