Whip up a flavorful kale and kidney bean soup with savory kielbasa sausage to wow your loved ones!
Ingredients:
  • 2 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1 (16 ounce) package kielbasa (Polish) sausage, diced
  • 3 potatoes, cut into cubes
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup water
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 3 carrots, chopped
  • 1 bunch kale, cut into thin ribbons
  • 1 cup small elbow macaroni
  • 6 tablespoons grated Parmesan cheese, or to taste
Instructions:
  • In a stock pot over medium heat, sauté onions and garlic in olive oil until fragrant, around 1 minute. Add kielbasa and cook until browned, about 5 minutes. Mix in potatoes, season with salt and pepper, and cook until potatoes start to brown, about 2 minutes.
  • Combine chicken broth, water, kidney beans, carrots, and kale in a stock pot. Bring to a boil, then simmer on medium-low heat for 45 minutes.
  • Combine macaroni with soup and cook until macaroni is al dente, about 15 minutes. Sprinkle each serving with 1 tablespoon of Parmesan cheese before serving.
