Quick and easy flourless Portuguese coconut cakes with a macaroon-like chewiness, made with just 4 ingredients.
Ingredients:
  • 1.75 cups shredded coconut
  • 0.75 cup white sugar
  • 1 tablespoon grated lemon zest
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 3 muffin cups with paper liners.
  • Combine the coconut, sugar, eggs, and lemon zest in a large bowl, then spoon the mixture into lined muffin cups.
