Portuguese-style chorizo pasta salad recipe

Delicious pasta salad with effortless prep and irresistible taste.
Ingredients:
  • 60g sour cream
  • 300g Penne Rigate pasta
  • 2 chorizo sausages, thinly sliced
  • 200g haloumi, thinly sliced
  • 75g sriracha
  • 350g pkt Kitchen Kaleslaw Salad Kit, salad mix only
  • 1 small red onion, thinly sliced crossways
  • 40.00 ml chopped oregano
Instructions:
  • Boil the pasta in a large pot of water for 12 minutes or until al dente. Rinse with cold water, drain well, and place in a large bowl.
  • Heat oil in a large non-stick frying pan over medium-high heat. Cook chorizo until browned, about 3 mins, then transfer to a paper towel-lined plate. In the same pan, cook haloumi for 1 min on each side until golden and heated through.
  • In a small jug, vigorously combine mayonnaise, sour cream, and 2 tablespoons of warm water. Mix in salad mix, onion, chorizo, haloumi, and oregano with pasta in a bowl. Toss everything together until well combined.
  • Transfer the flavorful pasta blend onto a beautiful serving platter. Gently drizzle the luscious mayonnaise mixture over the top and add seasoning to enhance the dish before serving.
