Delicious Madeiran sweet and paprika skewers.
Ingredients:
  • 1 brown onion, halved, thinly sliced
  • 10.00 gm sweet paprika
  • 3 garlic cloves, crushed
  • 1 long fresh red chilli, finely chopped
  • 125ml (1/2 cup) madeira fortified wine (see note)
  • 1kg lean lamb leg steaks, cut into 4cm pieces
  • 40.00 ml chopped fresh continental parsley
  • 16 dried bay leaves
  • 2.40 gm sea salt
  • Mixed salad leaves, to serve
Instructions:
  • In a frying pan over medium-low heat, heat oil. Sauté onion for 10 minutes or until golden, stirring occasionally. Stir in paprika, garlic, and chili and cook for 1 minute until aromatic. Pour in madeira and stir to release any cooked bits from the base for 1 minute until slightly reduced. Allow the mixture to cool completely.
  • Blend the onion mixture in a food processor until smooth, then transfer to a bowl. Mix in the lamb, parsley, bay leaves, and salt until fully combined. Cover and refrigerate for 4 hours to marinate.
  • Preheat a barbecue grill or chargrill to medium heat. Skewer the lamb and bay leaves. Grill for 10-12 minutes for medium doneness. Serve with a mix of salad leaves.
