Broad beans with chorizo & coriander

Herb and sausage broad bean side bursting with flavor.
Ingredients:
  • 500g pkt frozen broad beans
  • 1 chorizo sausage, thinly sliced
  • 1 red onion, halved, thinly sliced
  • 40.00 ml white wine vinegar
  • 62.50 ml chopped fresh coriander
Instructions:
  • Place broad beans in a heatproof bowl, cover with boiling water, and let sit for 1 minute. Drain, rinse under cold water, and peel off the skins. Rinse again under cold running water.
  • 1. Preheat a non-stick frying pan over medium heat. 2. Sauté chorizo and onion for 5 minutes until chorizo is crisp. 3. Add broad beans and vinegar, then mix well. 4. Transfer to a serving dish and garnish with fresh coriander.
