"Enhance this delicious broad bean side dish with savory salami."
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, finely chopped
  • 30g hot Spanish salami, chopped
  • 2 large (about 380g) ripe tomatoes, chopped
  • 60ml white wine
  • 600g frozen broad beans, thawed, peeled
  • 20.00 ml chopped mint
  • Crusty bread, to serve
Instructions:
  • In a frying pan over medium heat, sauté onions until soft, about 5 minutes. Add salami and cook for an additional 2 minutes. Pour in tomatoes and wine, simmer until slightly thickened, then season with salt, pepper, and a pinch of sugar.
  • Add beans to the pan and simmer for a quick 2 minutes. Finish off with a fragrant sprinkle of fresh mint before serving alongside crusty bread.
