Delicious Spanish bean pot pies topped with creamy, cheesy polenta.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 2 zucchini, diced
  • 1 red capsicum, diced
  • 220g tomato
  • 420g can Heinz® Beanz Creationz™ Spanish style Beanz
  • 20.00 ml chopped oregano, plus extra sprigs to serve
  • 375ml (1 1/2) cups water
  • 85g (1/2 cup) instant polenta
  • 50g (1/2 cup) grated mozzarella
Instructions:
  • In a frying pan on medium heat, cook the onion for 5 minutes until softened. Increase the heat to high, then add the zucchini, capsicum, and tomato. Cook for 5 minutes until the vegetables have collapsed. Season generously, then stir in Beanz Creationz™ and chopped oregano to combine.
  • In a large saucepan, bring water to a boil. Gradually whisk in the polenta. Reduce heat to low and simmer, stirring constantly for 10 minutes until thickened and smooth. Stir in butter and cheese until melted and creamy.
  • 1. Preheat grill to medium heat. 2. Divide vegetable mixture evenly among four 1-cup ramekins. 3. Sprinkle polenta over the vegetable mixture. 4. Arrange ramekins on a baking tray and grill for 10 minutes, or until golden brown. 5. Serve with a sprinkle of extra oregano on top for added flavor.
