Bean dip with vegetable crudites

Wholesome bean dip, ideal for veggie platters.
Ingredients:
  • 800g canned flageolet* beans, drained and rinsed
  • 125ml olive oil
  • 80ml lemon juice
  • 3 garlic cloves
  • A selection of vegetables for dipping (such as whole baby carrots and radishes, fennel sliced into wedges, blanched green beans)
Instructions:
  • Combine beans, oil, lemon juice, and garlic in a food processor. Puree until creamy.
  • Serve with a side of vegetables for dipping.
