Savory white bean and kale soup featuring garlic, onion, plum tomatoes, parsley, and chicken broth, customizable with cannellini or navy beans.
Ingredients:
  • 1 tablespoon olive oil or canola oil
  • 1 medium yellow onion, chopped
  • 8 large garlic cloves, crushed or minced
  • 4 cups chopped raw kale
  • 4 cups low-fat, low-sodium chicken or vegetable broth
  • 2 (15 ounce) cans white beans, such as cannellini or navy, undrained
  • 4 plum tomatoes, chopped
  • 2 teaspoons dried Italian herb seasoning
  • Salt and pepper to taste
  • 1 cup chopped parsley
Instructions:
  • In a large pot over medium-high heat, sauté the onion and garlic in olive oil until soft. Add kale and cook until wilted. Stir in 3 cups of broth, 2 cups of beans, tomatoes, herb seasoning, salt, and pepper. Bring to a boil, then lower the heat and simmer for 5 minutes.
  • Blend the remaining beans and broth until smooth, then stir into the soup to thicken. Simmer for 15 minutes. Serve in bowls and garnish with parsley.
