Beautiful lamb shanks

Transform dried chillies in sweet apple juice and raisins to create a spicy-sweet marinade for succulent lamb.
Ingredients:
  • 2-3 smoked ancho chillies
  • 1 large handful of raisins
  • 285 ml unsweetened apple juice
  • 4 lamb shanks
  • olive oil
  • 3 red onions
  • 8 cloves of garlic
  • 2-3 fresh red chillies
  • 1 heaped teaspoon smoked paprika
  • 3 fresh bay leaves
  • 2-4 sprigs of fresh rosemary
  • 1 x 400 g tin of quality plum tomatoes
  • 750 ml organic chicken stock optional
  • red wine vinegar
Instructions:
  • Preheat the oven to its highest setting. Combine dried chillies, raisins, and apple juice in a bowl, then set aside. Place lamb shanks in a roasting tray, coat with oil, salt, and pepper. Roast for 20 minutes. While they brown, chop onions, slice garlic, and deseed chillies. In a casserole pan, heat olive oil, then add onions, garlic, chillies, paprika, bay leaves, and rosemary. Cook for 10 minutes until softened. Blend rehydrated chillies, raisins, and apple juice in a food processor. Add to the onions. Lower oven temperature to 140°C/275°F/gas 1. Add shanks, tomatoes, and stock to the casserole pan. Cover and cook in the oven for 2.5-3 hours. Season with salt, pepper, and vinegar before serving with sides of your choice.
