Easy homemade mint jelly using fresh mint, sugar, and pectin. Enhances the flavor of lamb beautifully.
Ingredients:
  • 1.5 cups packed fresh mint leaves and stems
  • 2.25 cups boiling water
  • 1 drop green food color
  • 3.5 cups white sugar
  • 3 fluid ounces liquid pectin
Instructions:
  • Wash mint leaves and stems, then transfer to a medium saucepan. Use a potato masher or the bottom of a jar or glass to crush them. Pour in boiling water, cover, and steep for 10 minutes.
  • After straining the mint mixture, return 1 2/3 cups of fresh mint to the saucepan. Add lemon juice and food coloring, then stir in sugar. Heat the mixture over high heat until boiling, stirring constantly. Mix in pectin and continue to boil for 1 minute, while stirring constantly.
  • After taking the mixture off the heat, use a large metal spoon to skim off any foam on the surface. Then, carefully transfer the mixture into hot, sterilized jars and seal them.
  • Fill a large stockpot halfway with water and bring to a boil. Lower the jars into the pot with a holder, ensuring a 2-inch space between them. Add more boiling water if needed to have at least 1 inch above the jars. Cover the pot, bring to a full boil, and process for 10 minutes.
