Elevate any dish with this vibrant mint jelly - ideal with lamb, sandwiches, or toasted bread. Simply chop mint leaves, add green food coloring for an appealing hue, and enjoy!
Ingredients:
  • 1 cup packed fresh mint leaves, chopped
  • 0.5 cup cider vinegar
  • 3.5 cups white sugar
  • 5 drops green food coloring
  • 1 (3 ounce) pouch liquid pectin
  • 9 half pint canning jars with lids and rings
Instructions:
  • Combine fresh mint, water, vinegar, and sugar in a sturdy pot over medium-high heat; bring to a boil while stirring constantly. Remove from heat and mix in food coloring and pectin. Return to heat and boil for 30 seconds. Strain through damp cheesecloth.
  • Boil the jars and lids for a minimum of 5 minutes to sterilize. Fill the hot, sterilized jars with the strained liquid, leaving 1/4 inch from the top. Gently run a knife or spatula along the inside of the jars to release any air bubbles. Use a damp paper towel to clean any food residue off the jar rims. Seal with lids and secure with rings.
  • Position a rack in the bottom of a large stockpot and fill halfway with water. Bring to a rapid boil over high heat. Gently lower the jars into the pot using a holder, ensuring a 2-inch space is left between them. If needed, top up with more boiling water until jars are covered by at least 1 inch. Cover the pot, bring water back to a full boil, and process for 15 minutes.
