Beautiful smoky barbecued shellfish

Grill fresh seafood with confidence!
Ingredients:
  • 1 clove of garlic peeled and finely grated
  • 3 lemons zest and juice of
  • 2 handfuls of fresh flat-leaf parsley leaves picked and chopped, stalks finely chopped
  • herb branches, such as bay, rosemary or myrtle branches optional
  • 2 kg shellfish from sustainable sources, ask your fishmonger
  • 2-4 fresh red chillies deseeded and sliced
Instructions:
  • Prepare the dressing by combining garlic, lemon zest, lemon juice, and extra virgin olive oil in a large bowl. Add finely chopped parsley stalks and mix well. Optional: smoke herb branches on the grill. Cook shellfish on the hottest part of the grill, covering them with a metal bowl or roasting tray. After 3 minutes, check to see if the shellfish have opened. Transfer opened shellfish to the bowl with the dressing, discarding any unopened ones. Sprinkle with chopped parsley and chili, then gently mix. Enjoy this delicious finger food by savoring the juices with a shell. Don't forget to have paper towels and a finger bowl handy.
