Beautifully cheesy pasta fonduta

Ingredients:
  • 2 tablespoons mascarpone cheese
  • 40 g blue cheese
  • 40 g goats cheese
  • 4 sprigs of fresh marjoram
  • 1 lemon
  • 250 g tagliolini
  • 1 small bunch of fine asparagus
  • sea salt
  • freshly ground black pepper
  • extra virgin olive oil
Instructions:
  • 1. Boil salted water in a large pan. Reduce heat to low. Melt cheeses in a bowl over the pan. Add marjoram, lemon zest, stir. Remove from heat. Season with salt. 2. Boil pasta according to package instructions. Add asparagus for the last 2 minutes. Drain, reserving a cup of water. 3. Toss drained pasta and asparagus with cheese mixture. Add reserved water if needed. Place on platter, top with lemon zest, marjoram, black pepper. Drizzle with olive oil. Serve.
