Beef, asparagus and snow pea stir-fry

Colorful asparagus and crisp snow peas elevate this lively beef stir-fry.
Ingredients:
  • 450g beef stir-fry strips
  • 1 bunch asparagus, cut into 6cm lengths
  • 100g snow peas, trimmed
  • 1 small onion, sliced into thin wedges
  • 2 tsp grated ginger
  • 36.40 gm peanut oil
  • 48.80 gm oyster sauce
  • 21.00 gm salt-reduced soy sauce
  • 20.00 ml sherry
Instructions:
  • In a large bowl, combine soy sauce, oyster sauce, ginger, and 1 tablespoon sherry. Mix well. Add beef strips, cover, and refrigerate for 15 minutes to marinate.
  • In a wok or large non-stick frying pan, heat half of the oil. Drain the beef from the marinade and cook in batches over high heat for 3 minutes, or until almost cooked through. Remove beef and wipe the pan clean with a paper towel.
  • Heat the remaining oil in the wok over high heat. Sauté onion for 4 minutes until tender. Add back the meat, asparagus, and snow peas. Stir-fry for an additional 2 minutes. Serve hot with steamed rice.
