Indulge in succulent beef steaks paired with charred asparagus and zesty rocket Parmesan salad.
Ingredients:
  • 80ml olive oil
  • 40.00 ml balsamic vinegar
  • 1 garlic clove, finely grated
  • 2 Graze Grass-Fed Beef Scotch Fillet or Porterhouse Steaks (about 220g each)
  • 36.40 gm olive oil, divided
  • 1 bunch asparagus, woody stems removed
  • 60g baby rocket leaves
  • 50g piece parmesan
Instructions:
  • Get the barbecue ready for medium-high heat. Mix extra virgin olive oil, vinegar, garlic, 1/2 teaspoon salt, and a pinch of pepper in a small bowl until well combined (it's okay if the dressing is slightly separated).
  • Drizzle steaks with a luxurious touch of 1 tablespoon of olive oil and generously season with salt and pepper. Grill to perfection, ensuring even cooking on each side for 3-4 minutes, reaching a succulent medium-rare internal temperature of 54°C. Transfer steaks to a cutting board, generously spoon 1 tablespoon of dressing over each, and allow the flavors to meld for 5 minutes. Enjoy!
  • Coat asparagus in 1 tablespoon of olive oil and generously season with salt and pepper. Grill, turning occasionally, for 5 minutes or until perfectly charred and tender-crisp.
  • Place the rocket and asparagus beautifully on a platter. Slice the steaks against the grain and add them to the platter. Drizzle the dressing over the top, then elegantly shave Parmesan using a vegetable peeler to finish the salad.
