Burgundy Beef with Herb Bouquet: A French classic highlighting the region's famous wines with a special herb blend for exquisite flavor.
Ingredients:
  • 1 cup beef broth
  • 3 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 1 teaspoon beef demi glace
  • 3 tablespoons bacon drippings
  • 2 pounds beef round, cut into 3 inch pieces
  • 3 tablespoons sherry wine
  • 1.5 cups chopped onions
  • 1 cup Burgundy wine
  • 3 sprigs fresh parsley
  • 3 sprigs fresh rosemary
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 12 fresh mushrooms, sliced
  • 0.25 cup butter
  • 1 tablespoon chopped fresh parsley, for garnish
Instructions:
  • Combine beef broth, flour, tomato paste, and demi glace in a small bowl; set aside.
  • In a large heavy skillet over medium heat, warm the bacon drippings. Brown the beef on all sides, then set it aside. Pour sherry wine into the skillet. Saute onions for about 5 minutes. Mix in the tomato paste and bring to a boil. Add Burgundy wine. Create an herb bouquet with parsley, rosemary, thyme, and bay leaf wrapped in cheesecloth. Add the herb bouquet to the sauce.
  • Add the beef back to the skillet, cover, and let it simmer gently for approximately 3 hours until the beef is tender.
  • In a small skillet over medium heat, melt butter and sauté mushrooms until lightly browned. Add to meat in the skillet and cook for 15 minutes. Remove bouquet garni and serve in a casserole dish, sprinkled with parsley.
